Spanish: Summer Salad

(makes 4 servings)
Ingredients:
- 3 roma tomatoes
- 1 English cucumber (“seedless”)
- 1 medium red onion
- 1 green pepper
- 1 red pepper
- 2 cloves garlic, minced
- A pinch of cumin
- ½ teaspoon salt
- 1 teaspoon freshly ground black pepper
- 3 tablespoons extra virgin olive oil
- 2 tablespoon red wine vinegar
Procedure:
- Coarsely tomatoes, cucumber, onion, green pepper, red pepper; place in a bowl
- Make the dressing: in another small bowl combine the rest of the ingredients and mix well
- Drizzle dressing over the salad, toss well to coat
- Cover and chill in the refrigerator for about 1 hour
- Serve chilled with bread
